Dr. Tatiana Kuznetsova, a Russian nutrition expert, announced that celery is a versatile vegetable, because all its parts can be eaten: the root, the stem, and even the seeds.
The expert points out that celery contains a low percentage of calories and has many beneficial properties.
She says: “The antioxidants found in celery protect cells from damage and inhibit inflammatory processes in the body. Potassium enhances cardiovascular health, controls blood pressure, and maintains a healthy heart rhythm. Vitamin K also helps strengthen bones and reduce the risk of fractures.”
According to her, thanks to dietary fiber, celery stimulates digestion, improves bowel movement, reduces constipation, has a positive effect on bacteria, creating good conditions for beneficial bacteria, and reduces the absorption of cholesterol and blood sugar.
She says: “Celery contains vitamin A, which maintains the beauty and health of the skin. The stalk also contains a high percentage of vitamin C, so it is recommended to eat it fresh, as it stimulates digestive enzymes, which improves the process of absorbing nutrients from foods.”
She adds: "Celery seeds are used as a spice that has antibacterial properties, and some studies have shown the benefits of seeds in enhancing the brain's cognitive abilities."
As for celery roots, they can be eaten grilled, fried, and boiled, as when boiled they give a delicious taste and distinctive aroma.
